If I setup magicspam with RBL list should I take plesk/postfix ones out?

We suggest using only reputation list in MagicSpam (BMS lists), in which case you can disable RBL lists in Plesk; however, MagicSpam will work properly with RBL lists enabled in Plesk as well.

Ok I see, that's why an IP on the magicspam whitelist will not be bypassed because the plesk rbl filter is checked first right?
So my question is if I want more flexible configuration o should disable all check's from plesk so magicspam can handle all incoming mails since I have more options for black and white list, right?

You are correct, If you would like all policies in one place for easier management, MagicSpam offers more flexibility and allow whitelisting of desired senders. Further more, if you need any reputation lists that are in Plesk but not in MagicSpam, you can simply add them via MagicSpam " RBL (Realtime Blackhole Lists)" under the "Settings / IP Reputation" section in MagicSpam admin interface panel.

Final question, is there anywhere a full list of the functions available on the plesk free version and the difference from the pro versions, like one thing I found out and is not documented correctly in the interface is that the free version does't allow wildcards on the email white or black lists apart is written there that we can use them.

You are correct, using wildcards to whitlist/blacklist entire domains/subdomains is only available in the MagicSpam PRO version.
